My Question:
I referred to and copied a list of definitions of technical terms, ie "Power Distance" into the body of my article as a resource for the reader, ie • "Power Distance: focuses on the degree of equality, or inequality, between people in the country's society." Should I have referenced those definitions or rewritten/paraphrased them? The article was about the importance of conducting cultural research before engaging with international clients. Should I have referenced those definitions or rewritten/paraphrased them? Feedback will be valued.

Yes. You should always cite even short snippets if you're using another writer's words.
