Primary question.

On what topics/categories/titles can i write? Can i write a different article on any written title in any category? OR
I have no option but to write only on articles that is requested.

Write whatever catches your fancy whether it's for a request or simply something that interests you. The exception of course would be topics that are not accepted here such as fiction or poetry.
